BEST USES:

Brisket can be braised (like a pot roast), poached (like for corned beef), or hot-smoked (like for southern-style barbeque). There is a lower amount of fat (if any) found on a single brisket. Ensure that your brisket is well seasoned and that you have ample braising liquid to maximize the flavor. Always cook your brisket with the fat side up, and ensure that after you dress it with kosher salt, pepper, and other seasonings, it is well covered with foil before placing in the oven at 300 degrees, until fork tender.
