Flank steak is a popular and more economical substitute for a rib-eye steak. It is a cut that’s brimming with flavour and contains almost no fat. Magen Meats’ flank steaks come from the steak part of the shoulder, and while they may be a slightly tougher cut of meat, when prepared properly they can be tasty and tender. Due to their low-fat content, it does not need to be trimmed, and they don’t shrink as much as other cuts.

Always pat the meat dry with paper towels before prepping for cooking. It can be seasoned simply with salt and pepper, or one of Magen Meats’ amazing meat rubs, and benefits from additional tenderizing in order to achieve the best flavour.
Tenderizing can be done by hand with a meat tenderizing mallet, chemically using an acidic marinade (wine, pineapple or citrus juice) or by cooking the steak low and slow to gradually break down its dense connective tissue. Flank steak is ideal for fajitas, stir-fries, and other meals that call for beef strips. Rest the cooked steak for at least five minutes before serving. Ensure you slice against the grain in thin slices, preferably at a 45-degree angle. (Slicing with the grain may result in an unpleasant and chewy steak.)
