It’ll look regal on your table – the best way to describe crown lamb roast. This is the ultimate way to leave your guests gob-smacked (and lip-smacked). Just like the crowns that grace the heads of kings and queens, the crown roast is all about presentation. The crown lamb has been inverted and Frenched (cleaned of all meat, fat and sinew) and formed into a circle (or crown). We are proud to offer Southdown Lamb, the “Aberdeen Angus” of the sheep industry, hailing from our farm in Hamilton. All of our lambs are free-range, antibiotic and hormone-free.
The approximate size per package is 1.3kg, with 2 racks per crown.

Prepare a rub with chopped fresh rosemary and thyme, minced garlic, salt and pepper. Mix in Dijon mustard and a drop of red vinegar. This is a pricey cut of meat, so ensure that you use a meat thermometer and cook accordingly. Preheat your oven to 375 degrees and roast until the desired temperature. Serve this with warm couscous, bulgar, mashed potatoes, or even stuffing.
