The Chuck Roast is a beautiful cut of beef if cooked correctly if you give it some time and some nice moist heat (AKA braising) you will end up with very flavorful meats that fall's apart in your mouth. The Chuck Roast is located in the Chuck (shoulder) of a cow, which is the primary weight-bearing muscle group. What we call a “Chuck Roast”, is also referred to as Boneless Blade, Bottom Blade, or Under Blade.
