Don’t let the word “mock” fool you. This is great economical steak from the back of the cow. It can be eaten whole, or sliced on a platter for a large group. (It is generally a tougher piece of meat, and does require tenderizing with a mallet.)

BEST USES:
Always pat the meat dry with paper towels before prepping for cooking. For braising mock tenderloin, sear quickly, and immerse in your favourite wine, broth or water. Ensure there is an acid base, such as vinegar, in your liquid. If using a dry rub, prepare spices in a small bowl and then rub it all over the meat. (Keep meat at room temperature for 30 minutes+ before searing. Do not marinate overnight.) After cooking, ensure you cover with foil and allow it to rest, then slice and place on a platter. This meat goes well with any type of mushrooms or onions.
