Delmonico is the fancy term for 2nd filet roast. Or you could call it chuck eye roast, or G-d’s gift to chunk o’ meat. It comes from the steak part of the chuck section, which continues to the rib. Slow cooking this roast guarantees that it will result in delicious gravy … and slices really well.

CHEF'S SECRETS:

Achieve maximum flavor by massaging it with vegetable or olive oil, and your favourite roast seasonings (including kosher salt and cracked black pepper). Then sear it in the oven at 450 degrees for 15-20 minutes. Then turn down the heat to 350 to continue cooking. This will ensure it remains juicy, while it continues cooking. Let it rest when it comes out, before slicing.
